It's been nearly a year since I first met Teri-Ann. We quickly connected over a shared love of health, wellness, and recovery. Though our friendship budded just before Teri was about to embark on six month journey around the globe, we kept in touch over Instagram. 

 

It was so inspiring to follow along as Teri-Ann posted colorful photos of her travels—completing a yoga teacher training in Mexico and continuing to practice throughout Bali, Thailand, India and London. Upon her return, Teri taught her first yoga class at Toronto's MaRS Building and followed up the practice by sharing some of these homemade delectable treats with all of us practitioners. In a sense, that's where this post was born.

As I type these words, I am munching on one of Teri-Ann's incredibly delicious Superfood Energy Balls. These are unlike any of the other healthy, round shaped snacks I have enjoyed before. They are very dense and exhibit the perfect balance of sweetness, nuttiness and saltiness which is reminiscent of a snickers bar—minus all the junk. As an added bonus, Teri-Ann used the most delicious maple syrup from a property her step father co-owns in Ontario.

Superfood Energy Balls

*recipe makes two dozen*

Ingredients:

  • 1 cup Peanut Butter
  • 1 cup Rolled Oats 
  • 2/3 cup Unsweetened Desiccated Coconut (+ extra for topping)
  • 1/3 cup Maple Syrup
  • 1/3 cup Ground Flax Seeds
  • 1/3 cup Carob Chips
  • Handful of Pumpkin Seeds
  • Handful of Sunflower Seeds
  • 2 tbsp Hemp Seeds (+ extra for topping)
  • 2 tsp Pure Vanilla
  • 1 tbsp Chia Seeds
  • 1 tsp Cinnamon
  • Pinch Sea Salt

Method:

  1. Stir to mix. Use your hands!! Roll into balls, sized to your liking.
  2. Balls should be a little bit sticky. Roll them into coconut, hemp, cacao or whatever floats your boat. 
  3. Store your Superfood Energy Balls in the freezer—so they are ready whenever you need a flavor packed snack.
  4. Enjoy!

We enjoyed making and sampling these treats with a french press of Guatemala La Bolsa roasted by Allegro Coffee. I'd suggest pairing these Superfood Energy Balls with any coffee that also has a nutty or chocolatey flavor profile. 

One of the best things about this recipe is that there is tonnes of room to experiment with it. You can change up the fillings—maybe substitute almond butter for peanut butter, brown rice syrup for maple syrup or chocolate chips for carob chips. You can also change up the toppings—I'd imagine these would probably taste incredible dipped in chocolate.  Be creative. The possibilities are endless!

Part 2

Home Made Hemp Milk 

Ingredients:

  • 4 cups Filtered Alkaline Water
  • 1 cup Hemp Seeds
  • 1 Medjool Date (pitted)
  • Pinch of Salt

Method:

  1.  Place all ingredients in a blender and blend on high until creamy.
  2. Strain through cheese cloth or a nut milk bag if desired. 
  3. Enjoy!
